Xylitol is a naturally occurring sugar alcohol found in birch, corn and a number of fruits and vegetables. It tastes sweet but the bacteria in dental plaque cannot ferment it into acid the way they ferment sugar, which is why it turns up so often in dental products. It also encourages saliva flow, and saliva is the mouth's own buffer against acid.
